Notification on task approval

We're currently implementing a service catalog item which requires that a certain person approves or declines the request. The person is sent the email with the approve and decline buttons and that all works beautifully. The person now requests that she gets a notification back via email that the request was approved or declined in order to keep track of what actions were taken.
She is a normal portal user and does not have access to log in to check the audit trail.

Is there a way to do this?
