I was just notified that the CC field is missing from Problems. This seems like an omission since it's available in so many other places, but could it be added?
Not an omission by any specific plan. At the time it was not viewed as a necessary component of problem. I do agree that it makes sense to add it and we will. Thanks for posting.
Let me give you our use case:
We've had a variety of incidents that all seem to have a larger Problem associated with them. We can assign the problem to a specific group, but there are other areas that need to be able to get updates on the current status of that same Problem, just like with regular incidents. This is especially important in the case of Problems, because it's larger-scale, so having multiple parties on the same page is particularly important.
As a workaround we'll make sure each Incident includes those other groups in the CC field and then link them to the Problem, but having this communication work this way is really important. Otherwise we'd just use a regular Incident and link all of the various incidents to that. But then it doesn't have the fields in Problems we'd like to see.

Additionally I would like to see the ability to add a comment box that would push to all the child incidents attached to the problem so I can notify all my end users of updates at once.
