I'd like a way to add tasks assigned to people/groups in a purchase order similar to how you can in a service catalog item. If someone is required to collect information and add it to the purchase order before being approved by an approver, there doesn't seem to be a way to assign this task to them from within the PO.
On the other hand, service catalog items now allow great flexibility and customization with how you assign tasks and approvers in whatever order you like, but the form fields are very primitive compared to the PO module's line items, shipping, totals calculations etc.
